Bikini Recipe

Yields 10 guests

To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Drink (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Place all the components inside a pan, bring to a light boil, mixing so the sugar melts. After that, turn off the burner allowing it to cool down entirely. Transfer to a sterilised bottle, close it keeping it in the fridge, where it will keep for up to four weeks.

To make Premix: Combine the specified liquid ingredients into one sizeable container, leave to sit for one hour, then strain preferably using a fine cloth, so it's fully clarified.

When ready to serve: Add 85ml from the cocktail base into your cocktail shaker containing ice, gently stirring carefully for about 60 seconds to cool it down. Filter to a frosted cocktail glass or equivalent, top with some cranberries and complete it with a brief mist with the mandarin essence over the drink.
